New Zealand Manuka Honey is known around the world for its unique flavour & the special antibacterial properties.
The Manuka tree (Leptospermum scoparium) is found in many parts of New Zealands’ native bush in both the North and South Islands.
Flowering in November/December/January (depending on the weather), the Manuka tree produces a mass of distinctive small blush pink/white flowers.
Most of the Manuka honey is harvested in January/February.
Manuka Honey Activity
Many attempts have been made over the years to identify what it is that makes Manuka honey “active”. Dr Molan of the Waikato University pioneered the research into Manuka honey activity. Most honey has a level of antibacterial activity known as “the peroxide level”. This peroxide is produced naturally by the honey bee.
Dr Molan was able to identify that Manuka honey produced this “extra” level of antibacterial activity. It is this activity that gives Manuka honey its unique place in the honey market.
Measured in percentages (%) the laboratory will report on the “extra” activity of Manuka honey as the “non-peroxide activity”. This is also known as “UMF Factor” in some honey.
